Spanish Cauliflower Rice

  • 1 head cauliflower

  • 1 tbsp olive oil

  • ½ cup diced onion

  • 3 cloves minced garlic

  • 1 tsp cumin powder

  • 1 tsp salt

  • 2 tbsp tomato paste

  • ¼ cup chicken or vegetable stock


  1. Grate or pulse the cauliflower in a food processor until the consistency of rice

  2. Heat up a large pan to a medium heat and add the onion and sauté for 3 minutes, then add the garlic and sauté for another 1-2 minutes.

  3. Add in the riced cauliflower, salt and cumin and stir to coat.

  4. Add in the tomato paste, then the broth and increase the heat. Continue to stir until the tomato paste dissolves into the mixture.

  5. If the mixture is too dry – add in more stock. If it’s slightly too wet continue cooking until the liquid dissolves.
