Plantain Pancakes

The green the plantain have the most health benefits as they have minimal impact on blood sugar and contain more of a certain type of carbohydrate which helps feed the good bacteria in our large intestine.  They also give a better texture to the pancake.

The riper yellow plantain are sweeter, have a greater impact on your blood sugar and have a less firm texture. 


  • 1 green plantain

  • 2 eggs

  • ¼ tsp cinnamon (other spices can be used)



  1. Blend one plantain (or 2 large bananas) with 2 eggs.

  2. Melt some coconut oil in a small frying pan over medium high heat.

  3. Pour in a third of the mixture and flip once small bubbles appear in the top then flip the pancake and continue cooking for 30 seconds – 1 minute.

  4. Serve with either your choice of vegetables or berries, nut butter and coconut yogurt
