Curried Cauliflower Rice

  • 1/2 large onion, diced

  • 1/2 tsp sea salt

  • 2 tbsp avocado or coconut oil, divided

  • 2 cloves garlic, finely chopped

  • 1 tbsp curry powder

  • 1 tsp cinnamon

  • 1/4 cup sliced almonds

  • 1/4 cup raisins

  • 1 medium head cauliflower, riced

  • Large handful chopped coriander

  • Salt and pepper, to taste



  1. In a large skillet over medium heat, add one tablespoon of oil. When the oil is hot, add the onions and salt. Cook and stir the onions until softened, about 5 minutes, until they become translucent.

  2. Add in the garlic, almonds, raisins, curry powder and cinnamon. Stir until combined well and cook for another minute.

  3. Increase the heat to medium-high, add the other tablespoon of oil, and add in the cauliflower. Cook for 3 to 4 more minutes, stirring frequently, until it's softened but not mushy.

  4. Remove from the heat, and stir in the coriander. Check flavour and add salt and pepper to taste.
