Grain Free Granola
1/2 cup unsweetened coconut flakes
1 cup almonds
1 cup walnuts
1 cup pecans
1/2 cup pumpkin seeds
6 medjool dates, pitted
1 Tbsp coconut oil
1/2 cup unsweetened dried cranberries
1 Tbsp cinnamon
1 tsp sea salt
1/2 cup hot water
Preheat oven to 150 C. Line a baking sheet with parchment paper.
Place the pitted dates in a bowl and cover with hot water. Allow these to soak while you prep everything else.
Place the almonds, walnuts, pumpkin seeds, and pecans on a food processor, and pulse in 1-2 second intervals until everything is chopped. Add the coconut flakes and pulse a few more times. Remove from the food processor into a separate bowl.
Drain the dates and place into the food processor. Blend on high until a paste is formed, adding 1-2 tablespoons of water if needed. Add the cinnamon, coconut oil, and sea salt, the blend an addition 10 seconds to combine.
Add the nut mixture to the food processor, and pulse a few times to fully combine the nuts and date paste.
Spread the granola mixture out evenly across a baking sheet. Bake for 20-25 minutes, stirring about every 5-7 minutes to prevent anything from burning.
Remove from the oven and mix in dried cranberries. Allow the granola to cool before serving.
