In an ideal world the only kind of food available to use would be organic but unfortunately this isn’t the case. This means we have to made decisions based on our budget and on what’s available. The dirty dozen was created to allow consumers to make an educated choice about which produce they buy that comes from organic farming and which comes from using conventional methods. The dirty 12 are the ones most affected by pesticides and would be the first ones to buy organically. The clean 15 are the ones least affected by pesticides.
Eating organic is also important for animal produce. Conventionally farmed stock can routinely be fed antibiotics, which once in our system negatively impact our gut bacteria. Also, conventionally farmed are fed a diet high in grains which can increase the ratio of omega 6 : omega 3 fats in the meat leading to a pro-inflammatory state. The typical western diet already contains too much omega 6 and anything we can do to readdress this balance will be helpful.
