Slow Cooker Curried Beef Stew

Ingredients

  • 1.2 kg beef stew chunks
  • 1 can full-fat coconut milk
  • 3 cups beef broth/stock
  • 2 medium onions, diced
  • 4-6 carrots, chopped
  • 1 tablespoon cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons ground ginger
  • 2 teaspoons garlic powder
  • 1 teaspoon red pepper flakes
  • 1 teaspoon cinnamon
  • Salt and pepper, to taste

 

Instructions

  1. If you have time, brown the meat in a pan first. If not, throw it into the slow cooker raw.
  2. Add the rest of the ingredients to the slow cooker, stir to combine, and cook on low for 5-6 hours.
  3. Finish the last hour with the lid off.
  4. If it seems too thick, add a bit more beef stock.
