Grain Free Tabouleh

Ingredients

  • 2 medium red onions, finely chopped

  • 1 cucumber, diced

  • 1 small punnet of cherry tomatoes, halved

  • 1 head of broccoli – grated

  • 1 head of cauliflower – grated

  • 1 large handful of fresh mixed herbs, finely chopped - parsley, coriander and mint

  • Seeds from a large pomegranate

  • Juice of 2 lemons

  • Olive oil

  • Season with salt and pepper

 

Instructions

  1. Combine the vegetables in a large bowl

  2. Drizzle with the lemon juice and generously cover with olive oil
